1/2 cup fat free buttermilk
1/2 cup cornflakes, crushed
3 Tablespoons all purpose flour
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
2 lbs chicken parts, skinned (i use frozen chicken breasts, but any type will probably work)
4 teaspoons canola oil
*Preheat oven to 400 ; spray a large baking sheet with nonstick cooking spray.
*Pour the buttermilk into a large shallow bowl. On a sheet of wax paper, combine the cornflake crumbs, flour, salt, and pepper. (i use another bowl for this instead of wax paper).
*Dip the chicken into the buttermilk, then dredge in the cornflake mixture, coating completely. Place the chicken on the baking sheet: drizzle with oil.
*Bake 20-30 mins, then turn over chicken. Bake until cooked through, 15-20 mins longer.

This is a weight watcher recipe. But it is oh so good. Whenever we want fried chicken, this is how we have it. Serve with mashed potatoes and a veggie for the complete meal.
