This is just one of the many things I love about fall. This recipe is super easy, and soo good. I’ve had several requests for it, so I’ve decided to just post it.
3 1/2 cups pumpkin (or 29 oz. canned pumpkin)
2 tsp. vanilla
3/4 cup apple cider or apple juice
1 cup brown sugar
2-3 cinnamon sticks
1-2 tsp. pumpkin spice
(add ground cinnamon to taste at the end, if desired)
Combine pumpkin, vanilla, apple cider, pumpkin spice, cinnamon sticks and brown sugar in a large saucepan.
Stir well and bring to a boil.
Reduce heat, then simmer for 30-40 minutes until thickened.
And that’s it! Enjoy!!
